Gratitude List



Yes, it's Tuesday, but I'm so excited about clearing 250 entries on my One Thousand Gifts list that I'm chiming in over at A Holy Experience with a handful of the blessings I've counted since I read the book:

2. Seeing my abs
7. Reading Curious George with the kids in my lap
12. Being able to give a client the information they need
26. Debbie giving communion
27. S. making banana pancakes for our kids
30. Three compliments on my shoes before noon
68.  Epic anniversary meal
96. Foraged mushrooms did not kill us
81. Liv saying "shushi."
100. Finding earthworm for kids
143. Loan of flower girl dress
170. Hanging out around the table late at night with our pastor, Josh, drinking wine
191. Watching Liv eat ice cream at Baskin-Robbins
192. Cody sighing, "Oh, mom.  I wish you could read to us."
207. Discovering a fish recipe the kids like

You may notice that half these entries somehow involve food!

    One of my favorites was #96: "forged mushrooms did not kill us" because it could mean that the act of foraging mushrooms was easier than you thought and didn't "kill you" or it could mean that you foraged mushrooms that were not poisonous and literally did not "kill you."

    And I love #207, because I cannot get all my kids to eat fish no matter what sauce I make or coating I roll it in. Care to share the recipe?? :)

  2. You made me laugh, Ann!

    Here is the "recipe": I warmed olive oil in a skillet and added a few pieces of cut-up tilapia fillet when the oil was hot. Once the fish was cooked through (opaque), I sloshed a few glugs of teriyaki sauce over the whole show and turned off the heat. I turned the fish pieces around in the sauce (which cools to something more like a glaze) to distribute everything evenly and served just like that.

    I've done it two more times now and it remains a toddler breakthrough!
