Patrice's Legendary Oatmeal Chocolate Chip Cookies

Remember the boyfriend I got tattooed with?  His mom made the best oatmeal chocolate chip cookies ever. 

She shared the recipe with me, and the only thing that's changed in the last fifteen years is that she now uses coconut oil instead of butter.  I made these last weekend, and while nothing will ever be as good as hers were, these came out pretty amazing.


1 cup melted coconut oil
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp salt
1 tsp soda
1 1/3 flour
3 cups old fashioned rolled oats
1/2-1 cup chocolate chips

Preheat oven to 350.  Incorporate oil and sugars, then add egg.  In a separate bowl, combine dry ingredients and oats.  Stir dry ingredients into wet, then add chocolate chips.  Bake until golden and done-smelling (about 8-10 minutes).
